Chef Catalina Vélez visits us from Cali, Colombia, one of the most recognized chefs on the Colombian gastronomic scene and owner of the Domingo Vereda and Domingo Amasa restaurants. Catalina is the founder of several projects that seek sovereignty in the territories, through the respectful use of local products, native, autochthonous seeds and seeds from regenerative agriculture crops and substitutes for illicit crops, giving opportunities to vulnerable peasant communities in Colombia. and focusing on organic agriculture.

For his part, chef Martín Louzao, owner of Cocina Abierta and Caleta Café in Old San Juan, through his Oriundo project and with the support of a group of experts in different disciplines, have investigated more than 200 products that grow on Puerto Island. Rich in order to include them in your gastronomic proposal. Through its dinners, it highlights and promotes the consumption of ingredients and species native to Puerto Rico, generating awareness about the importance of local consumption and with a view to contributing to the food sovereignty of the Island.


We will have a dinner in collaboration between these two chefs that will seek to highlight the cuisine of both and what is produced in both Puerto Rico and Colombia from regenerative, organic agriculture projects but above all conscious of local consumption. It will be a 6-course menu that will feature the pairing by Michi Negrón, Cocina Abierta's Beverage Director.
