From Medellín, Colombia we will have the chefs Rob Pevitts, Sebastián Marín and Mateo Ríos from the X.O restaurant, which is among the best in Latin America according to Latin America's 50 Best Restaurants cooking on the Island. In this restaurant the chefs prepare creative cuisine inspired by in Colombian biodiversity. For his part, chef Martín Louzao, who has been running his Cocina Abierta restaurant in San Juan for 12 years and through the Oriundo project, has done research and vindication of what grows in Puerto Rico to bring it to the table. We are waiting for you at the Cocina Abierta Atelier where we will have a 6-course tasting menu inspired by the cities of Bogotá, Medellín and Cartagena and that will feature the pairing of Michelle Negrón, our Beverage Director and sommelier.
